One Pot Recipes are an Essential Part of Camping

As full-time RVers, one pot meals are 100% essential whenever we are dry camping or boondocking. Here are just a few reasons why:

#1. Less dishes to wash. Unless you're camping at a campground with water and waste disposal, having less dishes to wash at the end of a meal is key to conserving your water supply.

Besides, who wants to spend all their time scrubbing pots and pans when there's campfires to enjoy???

#2. Ease of serving. One pot meals are easy to keep warm and do not require a separate serving dish. Even better, leftovers can be stored AND reheated within the same pot or pan that they were cooked in.

#3. They are easy to scale up or down: Nearly every recipe in this list can be scaled down to serve one or two people or scaled up to feed a hungry crowd. the only limitation is the size of your pot and, in some cases, the size of your oven or stove top.

Delicious Recipes for Indoor and Outdoor Cooking

Nearly all of the recipes below can be prepared on a camp stove, Blackstone griddle/ grill, over an open campfire, or in a typical RV propane oven and/or stovetop.

In addition, most can be easily adapted to your personal tastes, preferences, and diet requirements. A few include helpful instructions for pre-trip prep work and most leftover food can be stored in a refrigerator or cooler and then reheated later in the week.

The BEST Green Chili with Hatch Chile and Pork Ribs

This one-pot Green Chili recipe is one of my all-time favorite camping meals. The recipe is the result of years of tweaking and testing (and eating!), until it was packed with as much rich, meaty chili flavor as I could cram in there. The recipe makes a giant pot of Chili - enough for a crowd or for using for multiple meals througout your camping trip.

Eat this Pork Green Chili on its own, in big bowls, with warm flour tortillas for dipping. Or, use it to smother burritos, enchiladas, or Chili Rellenos. Or, spooned over eggs, or veggies, or rice and beans, or anything that strikes your fancy.

Red Lentil Soup with Ham and Aleppo Pepper Oil

Red lentils are cooked until tender and creamy in a broth flavored with paprika, cumin, and a few pieces of ham, then topped with bright, flavorful Aleppo Pepper Oil and fresh parsley.

This simple recipe is one of my favorite things to make on lazy evenings when I want a hot, comforting, nutritions meal in under an hour, without putting in a lot of work.

Pork Bites are delicious all on their own but they are positively mouthwatering when eaten with green apples that have been sautéed in butter and brown sugar.
