Buttered carrots requires just 5 ingredients

For all its rich, creamy, indulgent flavor, these brown butter braised carrots are extremely simple to prepare and require just 5 ingredients:
- Carrots
- Butter
- Salt
- Ground black pepper
- And some chopped fresh chives
The chives are actually optional. These buttered carrots are perfectly delicious with nothing more than a sprinkle of salt and pepper. But, a smattering of chopped fresh chives adds some bright flavor that cuts through the richness of the butter AND contributes a gorgeous pop of color that I love.
Slice the carrots on a bias (diagonal) into pieces that are about ½-inch thick.

Two steps to brown buttered carrot perfection
Cooking carrots in butter with no water concentrates their flavor and maximizes their natural richness. As the butter cooks in the pan along with the carrots, the milk solids brown which adds a gorgeous nutty, caramelized flavor.

Cook the carrots in melted butter in a covered skillet until the water in the carrots releases and creates steam. Lower the heat and let the carrots gently steam until they are very tender.

Remove the lid, sprinkle the carrots with salt and pepper, and cook until the milk solids in the butter begin to brown.

Transfer the buttered carrots to a bowl, sprinkle with chopped chives, and they are ready to serve!

Brown Buttered Carrots
Slowly cooking carrots in brown butter creates a rich, indulgent side dish that's the perfect compliment to a wide variety of main dishes. This simple recipe requires just 5 ingredients and is the perfect match for nostalgic, comforting dishes like braised brisket and meatloaf.
Ingredients
- 1 ½ pounds carrots
- 3 tablespoons butter, salted or unsalted
- Salt and pepper
- 3 tablespoons chopped fresh chives
Instructions
- Peel the carrots and set them on a cutting board. Using a sharp knife, cut the carrots on the bias, to create diagonal slices that are about ½-inch thick (see photo above for reference).
- Add the butter to a 12-inch skillet and set it over medium heat. When the butter has melted, add the sliced carrots. Cover the pan with a lid and cook until steam begins to escape from the pan. Reduce the heat to low and cook until the carrots are tender, about 10 minutes.
- Remove the lid, sprinkle with a bit of salt and pepper, and cook, stirring every now and then, until the liquid has evaporated and the butter begins to brown, about 5 minutes.
- Transfer the carrots to a bowl, sprinkle with chives, and serve.
