These hamburger bowls are everything you love about a really good cheeseburger, minus the bun and piled into a bowl with crisp, tangy cabbage slaw and a generous spoonful of fresh, herby chimichurri sauce. The burgers are cooked in a hot skillet until they develop deliciously crispy edges, then topped with slices of sharp cheddar that melt into every nook and cranny.
The combination of juicy beef, melted cheese, crunchy sweet-and-sour slaw, and bright, garlicky chimichurri makes these burger bowls ridiculously flavorful and deeply satisfying. Even better, the whole meal takes just over 30 minutes to prepare, making it an easy high-protein dinner for any night of the week.

My husband and I raised our kids in Colorado and lived there our entire lives until selling our house in 2020 and moving into an RV. One of our family's favorite restaurants was, and still is, Tap and Burger.
The restaurant began with one location in Downtown Denver and has since branched out to multiple locations across the state. One of those locations is, happily, just minutes from our oldest daughter's apartment, which means we are apt to make a visit every time we are in town.
On one such visit, after a trip to see the holiday lights at the Denver Botanic Gardens, I ordered their Burger Bites: two beef slider patties, sharp cheddar, sliced tomato, chimichurri, coleslaw.
The combination of crispy-edged beef patties, melted sharp cheddar, chimichurri sauce, and slightly sweet cabbage slaw was so delicious I resolved to make it at home. This recipe is the result.
The Burger Bites at Tap and Burger are a snacky kind of meal - small, protein-rich, and perfect on nights when you're not very hungry.
I wanted to take the idea and make a more substantial meal out of it. So, I've used full-sized ½-pound patties for these hamburger bowls. The patties are cooked, smash burger style, in a cast iron pan so you get those delicious crispy edges we all love. Slices of sharp cheddar cheese are placed over the burgers as they cook so they have time to melt.
The patties are served over a very simple slaw, made with whatever veggies you like, and dressed with an easy sweet-and-sour vinaigrette and then topped with chimichurri sauce.
The whole meal takes around 30 minutes to prepare and is one of those high-protein, vegetable-heavy meals that feels satisfying and more flavorful than hamburger has any right to be.
Around here, we love anything topped with chimichurri sauce, but these hamburger bowls just might be our new favorite.

Ingredients needed to prepare these hamburger bowls

- The chimichurri sauce: This is the chimichurri sauce recipe I've been making for decades. I love it, my husband loves it, our kids love it. So, I make it often and put it on everything. One of the greatest things about this sauce is how easy it is to make. Put everything in the food processor or blender, blitz until it's the consistency you like, and you're done.
- I prefer using sharp cheddar, the sharper the better, for these hamburger bowls. But, use whatever kind of cheese strikes your fancy. Smoked gouda or pepper jack would be delicious.
- The slaw: For the hamburger bowls you see in these photos, I picked up a bag of broccoli and cabbage slaw at our local supermarket. Prepackaged slaw mixes that don't contain any dressing are a huge time saver in this recipe, but it only takes a few minutes to chop the veggies yourself if you prefer. Opt for cabbage only, or add in some diced broccoli, cauliflower, shredded carrots, or very thinly sliced bell peppers.
- The dressing: Vinegar, Dijon mustard, honey, salt, pepper, and olive oil are all you need to whip up a simple, flavorful dressing for the slaw.
- The hamburger patties: I like to make one ½-pound burger per person. But the beauty of a recipe like this is that you can make yours whatever size you like. Want them even bigger? Have at it. Want to make them slider-size, like they are at Tap and Burger? Please do.

Step-by-step photos and instructions

Follow the recipe instructions to make the chimichurri sauce. If you're moving on to make the hamburger bowls right away, there's no need to refrigerate it. If you're doing some advance prep work, store chimichurri in a covered container in the refrigerator for up to 3 days.

Make the slaw: If using a bag of pre-chopped slaw, simply dump it into a bowl. If chopping the veggies yourself, slice and/or shred them into very small pieces. If you have a food processor with a slicing blade, now is a great time to use it. Whisk the simple vinaigrette together, dump it over the slaw, stir to coat, and set aside. Every now and then, give the veggies a stir, to ensure they soak up as much of the dressing as possible.

Shape 2 pounds of ground beef into four thick patties. Sprinkle both sides of each patty with salt and pepper. Heat a bit of oil in a cast iron skillet until it's just starting to smoke. Add the patties to the skillet and cook until the bottom of the patties is brown and crispy.

Flip the patties over and use the back of a spatula to press them down inside the pan. This creates delicious crispy edges.
Note: You don't have to cook the hamburger patties in a cast iron skillet. Cast iron is great at giving the patties a crispy crust. But, any skillet will do just fine, as will a Blackstone Griddle. Or, if you prefer, cook the patties on a BBQ grill.

Place a few slices of cheese over the patties after smashing them down inside the skillet. When the patties have reached the desired level of doneness (see Hamburger Temperature Guide below), remove them to a plate.

To serve, divide the slaw between four bowls or plates. Top each with a cheese-covered hamburger patty and drizzle with a generous spoonful of chimichurri sauce.

To cook burgers exactly as you like them, use an instant-read thermometer to take the temperature in the center of each burger.
- Medium-rare burger: 120 to 125 degrees F (48 to 52 degrees C)
- Medium burger: 130 to 135 degrees F (54 to 57 degrees C)
- Medium-well burger: 140 to 145 degrees F (60 to 63 degrees C)
- Well-done burger: 150 to 155 degrees F (65 to 68 degrees C)

Hamburger Bowls with Cheddar, Chimichurri, and Crispy Slaw
These easy hamburger bowls are loaded with crispy-edged cheeseburgers, crunchy cabbage slaw, and fresh chimichurri. A delicious, high-protein 35-minute dinner!
Ingredients
- 1 recipe chimichurri sauce
- 12 ounces pre-cut slaw, OR 12 ounces of cabbage and any other veggies you like (*see note)
- ⅓ cup white wine vinegar, OR rice vinegar or apple cider vinegar
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- ½ teaspoon salt, more to taste
- ½ teaspoon freshly ground black pepper, more to taste
- ¼ cup extra-virgin olive oil
- 2 pounds ground beef (I like to use ground chuck with a fat-to-meat ratio of 80/20 or 70/30)
- 1 tablespoon vegetable or canola oil
- 8 ounces sharp or extra-sharp cheddar cheese, cut into 12 slices
