Watermelon Tequila Spritzers

These yummy summer cocktails are simply pureed watermelon, tequila (optional), Sanpellegrino, and salt. 

Watermelon Tequila Spritzer

Fresh Watermelon and Tequila Spritzers

This is one of my favorite beverages to serve to a crowd of all ages because they are so simple to mix individually, including the tequila for those who want it and leaving it out for those who don't (or aren't supposed to).

Simply puree and strain the watermelon into a pitcher and set it out alongside a bucket of ice, a small dish of salt, cans of Sanpellegrino, and a bottle of tequila.

These can also be frozen - add the watermelon juice and salt to a blender along with a handful of ice and blend. Pour into a glass and top with a bit of Sanpellegrino.

Ingredients

  • A small 3 lb watermelon (or a portion of a larger watermelon)
  • 16 oz tequila
  • 16 oz Sanpellegrino (Use any flavor, but I prefer the Pomegranate and Orange variety.)
  • Salt

Instructions

Make the watermelon juice:

  1. Slice the watermelon fruit from the rind and put it into a blender. Blend until completely pureed. Strain the watermelon puree into a pitcher.

For each cocktail:

  1. Mix 2 oz of tequila with 2 oz watermelon juice. Pour over ice and top with 2 oz Sanpellegrino.
