Crispy Fried Potatoes
with cheese and jalapeños
Crispy Fried Potatoes Queso Fresco (or PepperJack) Sliced, pickled jalapeños
Make a batch of Crispy Fried Potatoes, and set them on a paper towel to drain.
Crumble Queso Fresco cheese in a bowl.
You could also use shredded PepperJack.
Queso fresco is a fresh Mexican crumbling cheese that's bright and mild tasting.
Wipe out the skillet, add the potatoes, and top with crumbled cheese.
Scatter sliced jalapeños over the whole thing...
And bake in a 475 degree(f) oven or under the broiler until the cheese is melted.
Scoop the whole delicious mess onto plates or, just eat it directly from the skillet.
