Whether you've been cooking on a Blackstone griddle for years or are brand new to flat-top grill cooking, you're bound to find some new favorite recipes for camping, tailgating, or any kind of outdoor cookout.

In April of 2020 my husband and I sold our house and moved into a 5th-wheel RV. As we traveled from campground to campground, I noticed a lot of campers cooking outside on a large flat-top grill.

I soon learned that the grill most of our camping neighbors were using was a Blackstone Griddle. Even without knowing anything about them, the advantages of having one were obvious, and I couldn't wait to purchase one of my own.

What is a Blackstone Grill?

A Blackstone Grill (Blackstone Griddle) is a portable cast iron flat-top grill with up to 36 inches of cooking space that's fueled by propane.

For most campers, cooking on a Blackstone grill is considerably easier than cooking on a tiny RV stovetop or camp stove. My tiny kitchen is actually larger than many RV kitchens but even so, I love getting outside to cook.

Not only does the large flat cast iron cooktop allow you to prepare a lot of food at once, many Blackstone Griddles also have 2 or 3 independently adjustable burners. This gives the cook greater control over temperature while cooking several different foods at once.

What Are the Main Advantages of Cooking on an Outdoor Griddle?

  1. The large flat top surface. Ranging in size from 17 inches to 36 inches, Blackstone cooktops offer plenty of room to cook a lot of food, or several different kinds of foods, at once.
  2. Blackstone Griddles have the same properties as restaurant-grade Hibachi griddles. This means they have a versatile cooking surface with the ability to get very hot.
  3. They are portable! Blackstone grills are easy to take anywhere, camping, tailgating, or just to a friend's backyard BBQ.
  4. Propane powered. There's no need to set up a Blackstone next to a power outlet because they are powered by their own small, portable propane tank.
  5. Blackstone Griddles have a cast iron surface that is non-stick, retains and conducts heat well, is easy to care for, and will last for years and years.

What Can You Cook on a Blackstone Grill?

I think a better question is, what can't you do with a Blackstone Grill? They really are an incredibly versatile way to cook dinner! In addition to the recipes below, here are just a few things that I love to cook on our Blackstone grill:

  • Grilled sandwiches or burgers
  • Any kind of kabobs
  • Any kind of protein, including juicy seared steaks, pork tenderloin or chops, seasoned chicken, fish fillets, sausage... the list goes on and on
  • Grilled quesadillas
  • Pancakes or French toast for a crowd
  • Flat breads like tortillas and naan

Chicken Adobo with Coconut Milk {Filipino Style}

Filipino-style chicken adobo with coconut milk is truly one of the easiest and most delicious ways to cook chicken. After marinating the chicken in a delicious blend of coconut milk and soy sauce, sear the chicken on a Blackstone grill until the outside is golden and caramelized to perfection.

Flank Steak Tacos with Pico de Gallo

Strips of seasoned, grilled flank steak and sautéed red peppers & onions are layered inside warm corn tortillas and topped with the bright, fresh flavor of Pico de Gallo.

The recipe for these Flank Steak tacos includes instructions for grilling, broiling, or using a Sous Vide cooker to cook the steak.

Each method produces strips of tender, flavorful steak that's perfect for tacos. But my favorite way to cook the steak and veggies for these tacos is on my Blackstone griddle.

Blackstone Fried Rice with Pork or Chicken

Use fresh or leftover white rice and either chicken or pork for this easy, vegetable-packed Blackstone fried rice. Cooking fried rice on a Blackstone Griddle is fast and easy, and creates the perfect texture and flavor.

Blackstone Griddle Smash Burgers

The Smashburger is intended to be cooked on a flattop grill, so it's a super obvious (and delicious!) recipe idea for a Blackstone Griddle.

The Smashburger is made by forming meatballs and then use a spatula to press the burger right on the grill top. This is said to allow them to sear, which locks flavor into the burger, and helps it remain juicy.

Szechuan Tofu Stir-Fry

Szechuan Tofu is one of those super easy recipes to make using a Blackstone griddle. This stir fry is packed with vegetables and crispy pieces of tofu coated in a spicy vegan Szechuan sauce flavored with chili, garlic, soy, and rice vinegar.

How We Created an Outdoor Kitchen with A Blackstone Grill

Our Heartland Cyclone 5th wheel came with a standard outdoor kitchen that included a slide-out metal countertop with a sink (no drain), a two-burner gas stovetop, a super tiny refrigerator, and a television.

We replaced the metal countertop (and drain-less sink) with butcher block and swapped out the two burner gas stove for a 22-inch Blackstone Griddle.

We also removed the tiny refrigerator and added a slide-out shelf as a permanent platform for our Traeger Grill and Smoker.

The outdoor kitchen in our 5th wheel RV. We remodeled the kitchen to include a Blackstone Griddle and Traeger smoker.

Before the remodel, I only used the outdoor kitchen every once in a while. Now, I use it all the time, making dinner on our Blackstone grill several times a week all year long.
