Perfectly Baked Potatoes, Loaded Up with all the Good Stuff

This is not so much a recipe as magic. It's the bounty of cooking real, delicious food all week long. It's leftover night transformed into a gourmet feast.

Perfect baked potatoes couldn't be simpler to make and are an excellent blank canvas for all sorts of leftovers. In this case, you can dig out pork carnitas, green chili, sautéed red peppers and onions, jalapeños, cheese, sour cream, chives, cilantro... whatever leftover ingredients you have from this week's meal plan.

Loaded Baked Potato Bar

  1. Make as many Perfectly Baked Potatoes as you like.
  2. Dig around in your refrigerator for every good thing you can put on a baked potato. Set it all out, and let everyone build their own.
  3. Individual potatoes can be split in half, topped with cold ingredients like carnitas, cheese, and green chili, then placed in the microwave for a couple of minutes to melt the cheese and warm the meat and chili. Alternatively, preheat the oven to 350 degrees and place potatoes on a baking sheet to heat the potatoes along with the toppings.
  4. Top with additional cold ingredients - such as sour cream and fresh vegetables and devour.
